Raw Apple Cake

Ingredients

1 Cup Brown Sugar
1/2 Cup Vegetable Shortening
1 Cup Milk
1 tsp. Baking Soda
2-1/2 Cups Unbleached Flour
1/2 tsp. Vanilla (Pure)
1 Cup Sugar
2 Large Eggs
1/2 tsp. Salt
1 tsp. Baking Powder
2 Cups Diced Apples (Approx. 3 Medium Apples)
2/3 Cup Brown Sugar
1/3 Cup Butter- Melted
1/2 Cup Chopped Nuts
1 Cup Coconut

Instructions

Cake:
1. Heat oven to 350deg F.
2. Blend together vegetable shortening and both sugars.
3. Add eggs and vanilla.
4. Mix together dry ingredients and blend in slowly.
5. Add milk.
6. Pour mixture into a well greased 9x13 pan.

Topping:
1. Mix together all ingredients.
2. Sprinkle on top of dough.
3. Bake at 350 degF for 40-50 minutes.
